No bake Triple Layer Brownie Bites

Gosh I wasn’t expecting so much deliciousness as I randomly whipped these babies up!

These Brownie Bites are:

🌱 gluten free

🌱 dairy free

🌱 egg free

🌱 vegan

🌱 refined sugar free

Ingredients:

Brownie Layer

  • 1 cup almonds

  • 1 cup dry roasted cashews

  • 2/3 cup cacao powder

  • 12 fresh medjool dates, pitted

  • Pinch of salt

Caramel layer

  • 1 cup dry roasted cashews

  • 1/3 cup coconut sugar

  • 1/4 cup coconut cream

  • 1 tbs coconut oil

  • A good sprinkle of salt

Chocolate cream layer

  • 1 cup coconut cream

  • 1/3 cup cacao powder

  • 1/3 cup coconut sugar

  • 50g cacao butter, melted

Method:

Brownie layer

  1. In a food processor, add almonds and cashews and process until it starts to release the oils.

  2. Add dates and cacao and process until well combined. Mixture should hold together. If not add another date or two.

  3. Press into lined slice tray and pop in freezer.

Caramel layer

  1. In a blender, add cashews and blend until buttery. Add remaining ingredients and blend until smooth.

  2. Spread over brownie layer and pop in freezer.

Chocolate cream layer

  1. Blend coconut cream, coconut sugar and cacao until smooth.

  2. Add cacao butter and blend until just combined.

  3. Pour over the caramel layer and return to freezer to set.

Once set, slice into bars or small bite size pieces. Hide in a container in the freezer.
