ANZAC Cookies

A healthier take on the delicious ANZAC Cookies!

Ingredients:

  • 1 cup almonds

  • 1 cup gluten free plain flour

  • 1 cup desiccated coconut

  • ½ cup coconut sugar

  • ¼ cup coconut oil

  • 2 tbs rice malt or maple syrup

  • 1 tbs water

  • 1 tsp apple cider vinegar

  • ½ tsp bicarb soda

Method:

  1. Preheat oven to 150°C.

  2. Process almonds, flour, coconut, and coconut sugar until a fine crumble.

  3. Mix bicarb and apple cider vinegar in a small dish and then add to processor with remaining ingredients.

  4. Process until combined.

  5. Press into a silicon mini muffin tray.

  6. Bake 20 minutes or until golden.

  7. Allow to totally cool in tray before popping out.
