ANZAC Cookies
A healthier take on the delicious ANZAC Cookies!
Ingredients:
1 cup almonds
1 cup gluten free plain flour
1 cup desiccated coconut
½ cup coconut sugar
¼ cup coconut oil
2 tbs rice malt or maple syrup
1 tbs water
1 tsp apple cider vinegar
½ tsp bicarb soda
Method:
Preheat oven to 150°C.
Process almonds, flour, coconut, and coconut sugar until a fine crumble.
Mix bicarb and apple cider vinegar in a small dish and then add to processor with remaining ingredients.
Process until combined.
Press into a silicon mini muffin tray.
Bake 20 minutes or until golden.
Allow to totally cool in tray before popping out.
